I’m not exactly a huge fan of spicy food. In face, I have a very low tolerance for such things, much to the chagrin of the Fella. He can have gallons of hot sauce, all of the spicy pepper flakes, buffalo chicken to his face and be happy as a clam. I try a tiny bit of hot sauce on something and need 3 glasses of milk. So part of my goals for the summer, aside from not getting sunburned and no ticks please, is to up my spicy food intake by playing with some recipes.
It’s easy to start off with salsa, since all you have to do is put all the ingredients in a blender. My brother and I bought a really sick one at the end of last summer, so this recipe literally took me about 5 minutes.blenderNinja! Very worth it!
I found this recipe for “Guacamole Salsa“, but I like calling it Green Salsa because it’s not the same texture, consistancy, or taste as guacamole. Plus, I like using the Chipotle recipe for guacamole. It’s delicious.
This recipe calls for tomatillos (AKA tomate verde) instead of tomatoes, which I’m fine with because I don’t like tomatoes. The tomatillo is meatier, and has an almost citrus flavor. It tastes fresh, and works really well with the avocado.
Here’s the recipe I used:

  • 1 lb. tomatillos (or more if you want it thinner)
  • 1 jalapeno pepper (or more if you like it spicy)
  • 1/3 bunch cilantro
  • 1 thick slice of onion
  • 2 garlic clove
  • 1 avocado
  • 1 tsp. salt
  • A few shakes of Cumin

ingredientsI added the cumin and an extra clove of garlic because, garlic, and put everything in the blender. I took the advice of the original recipe, remembering the put the avocado in “last” (first, since my blender gets turned upside down to blend everything) and the tomatillos in “first”. I had to pack in the tomatillos a few at a time because I don’t have the biggest blender, but once everything started getting liquefied I fit all of the ingredients in no problem.chipThis stuff is not super spicy, but you can add more spice, or maybe more avocado if you want thicker texture. It tastes fresh, with a little kick to it, and the texture is thick enough that you can get a good amount on the chip without dripping some on your shirt. That’s a win in my book! Plus, the color is awesome!

You know those people who go and do stuff for charity for fun? I’m not one of them. I can’t be bothered to go out and walk around a track so that you can make 15$ off my aching legs and poor attitude. Actually, it usually comes down to me being too poor to give any money. Also, I’m lazy. Hello, I’m american! We like to watch other people do these things! Like the ice bucket challenge, which apparently has helped raise money for ALS, that I’m 75% sure a lot of my friends didn’t actually donate towards. They just did the ice bucket thing and then challenged other people, cus it was what people were doing. It was fun and cold and summer, you guys!
But, I digress.
On Monday this Fella I wanted to hang out with told me he was going to go give blood to the Red Cross on Tuesday morning. I had two questions, the first being “Well, when are we gonna hang out?” and the second, which I thought of a little while later, “Can I come?”
I have never given blood because when I tried in high school I had low iron, so I just assumed I would let sleeping dogs lie. Or, in more accurate terms, I was too lazy to try again. This fellow, on the other hand, apparently gives pretty regularly both blood and platelets. So I thought to myself, “I could be a good person too!” and I made the plan to do it.

Then I remembered this friend of mine, Kate, who is really more like a sister, who has had the diagnosis of autoimmune hemolytic anemia since before I met her a few years ago. Kate, who has posted on facebook about how much she appreciates people who give blood and platelets because she is one of the people who has to get transfusions. Kate, who has medical bills so big that she had to start a GoFundMe because her family has been financially run dry for the time being. I remembered Kate, and how much I miss her, and how she would appreciate the little gift of a pint of blood. I think that’s how I become able to give, by remembering the people who I know that are in need.
blood1Two older men were checking us in. I thought they were hilarious because they didn’t know how to use their computers, so I helped them out. They reminded me of my dad, because he always has me help him with computer stuff. Because we were walk ins we had to wait and see if appointments didn’t show up, so we hung out for 15 to 30 minutes before we both got numbers.
When my number was called I went with the technician and answered questions about never having had AIDS or HIV, never having left the country, not having had a blood transfusion from the United Kingdom or France, etc. She checked my blood pressure and iron, which was doing rather nicely compared to high school, and then set me up with another technician to get my blood draining.
blood2I’m not ashamed, I totes played on my phone and took selfies while I was waiting to get hooked up. The Fella was already hooked up, playing on his phone, and was eating pizza by the time I got punctured. After he went and sat down this older man came over to me.
blood3In a rather thick New England accent he announced, “Your boyfriend says to hurry up! You’re taking too long!”
“I just got started!” I replied, laughing at his sass.
“I’m joking with yah, he came over and I told him he cant leave for 15 minutes and he said ‘oh, I’ll be here for a while, I’m waiting for her!’ and he pointed over here so I came over to give you a hard time.”
“Well that’s fine, he’ll be OK.”
blood4At this point I was taking a selfie with my phone, because, yolo, at which time Carmine (that was his name) proclaimed, “That’s called a Selfie!”
I said yes, yes it is. Then Carmine offered to take a picture for me, but I declined and thanked him for the offer.
blood5When I was all unplugged by the very nice technician that was willing to discuss the absurdity of Paris Hilton with me I went over and had a piece of pizza with the Fella and drank some water. Afterwards we went to a Chinese place and I ate part of my meal, I was so very tired at that point! The rest of the day was spent taking a nap and watching Doctor Who.
I guess, if you want a life lesson out of this, what I would tell you when it comes to giving is twofold. First, give from the heart. Find a reason that you want to give and you will be more likely to actually do it. Don’t think about feeling good about yourself, because it doesn’t matter how you feel about yourself. What matters is whether or not you’re helping someone. Second, give what you can. Whether it’s money, clothes, food, blood, volunteer support, there is always a need to be filled. I’m hoping to find more ways I can give with what little I have, and I hope you will too. dirty

DSC_0061DSC_0063Since it’s mom’s birthday today I thought it would be a good time to share some really cool pictures from our sightseeing in Texas. We got to take the train to Reunion Tower in Dallas, which was completely rad.DSC_0078The view was incredible, and we got to have lunch at their Cloud Nine Cafe, which was super yum. Apparently all the items on the menu were designed by chef Wolfgang Puck, and there is another restaurant that is fancier called Five Sixty that requires things like making reservations and a dress code. You can get more information about the tower here. DSC_0101Being in a hotel room with my mother for 6 days could have been the worst, but I am so thankful that it wasn’t. I think God really wanted us to have a little vacation, because that’s what it felt like. We even worked out together in the tiny little hotel gym, which was pretty hilarious. The past few years have definitely been rough at times, but there has also been some positive growth, especially when it comes to the relationships in our family. I’m very happy to have my mom, I would never want another woman to take her place. DSC_0076

Adventures in Food: Spicy Honey Glazed Chicken & Zucchini Rice

DSC_0218It’s no big secret in my house that I have an unabashed love of chicken. It’s also no secret that I can be quite wary of spicy food, that I love cheesy rice, and that I love to experiment with different recipes. I also like to find recipes that don’t take all day!
This chicken recipe actually came from here, but I made some alterations because if the chicken were too spicy my roommates (parents) would probably die. We are not a spicy food family.DSC_0200DSC_02042 teaspoons each of garlic powder and paprika
1 teaspoon each of salt, pepper, chili powder, Mrs. Dash southwest chipotle seasoning blend
2 tablespoons of all-purpose flour
4 skinless, boneless chicken thighs
½ cup honey
2 tablespoons of apple cider vinegar
DSC_0205First I turned the oven on to low broil. I may have mentioned, I wanted this to be a faster recipe so I decided to make it so!
Combine all the powder ingredients in a bowl and mix them up. Wash the chicken, laying them out flat to dry. Keep them flat and absolutely cover them in the mixture. You want this stuff in all the nooks and crannies.col1Place the chicken in a glass baking dish that has been given a coat of cooking spray and stick it in the oven for about 10 minutes. When the timer goes off, turn the chicken over and put them in for another 10 minutes. I think that the reason I had to cook mine so long was because even spread out, my chicken thighs were still impressively thick!
While the chicken is cooking mix the honey and vinegar together. When you’ve cooked the chicken for 20 minutes total pull the pan out of the oven and smother the chicken with the honey mixture. Put it back in for 3 minutes, flip and cook another 3 minutes.col2DSC_0221DSC_0215I paired the chicken with another recipe I discovered recently for brown rice here. After cooking the rice completely I added 2 grated zucchini, 1 cup of grated cheese, and a splash of milk. I mixed it up and left the lid on the pot off of the heat so that the zucchini cooked and the cheese melted.DSC_0213
Next time I try this one I do want to add some garlic or onion to the rice before cooking it, because it was a little blander than I intended. It was perfect accompanying the chicken though, because it balanced out the spice without overwhelming with a strong new flavor.DSC_0223DSC_0233dirty

Dallas BBQ

DSC_0014Last week my mom and I took a little trip from New England to Dallas, Texas in order to see one of my Best Friends, her dad, husband, and brand new son George.  While we were there we spent a fair amount of time in their apartment, and mom convinced them it would be a really good idea to lug the ancient BBQ down from the third floor so we could enjoy some burgers.

DSC_0002Being from New England it’s very strange to go from 40-50 degree weather so 95 degree weather daily!  I ended up buying a pair of shorts and using a lot of sunscreen, so thankfully I have not gotten a sunburn yet this year.  It helped that all the buildings had air conditioning, which was really nice when we went to bed.  I love being nice and chilly before I fall asleep under a fluffy comforter!

DSC_0016George was a week old when I took these pictures, and his face has been filling out even more.  I love watching him; his facial expressions remind me of his mom so much!  I would be helping her with something, or we would just be talking, and she would say or do something that made me laugh and point out that it was the same expression that her baby makes!

ginnyGeorge’s mom actually has 2 dogs, and her dad has 1, but the only one that is friendly to all strangers and doesn’t run away is Ginny.  She’s got a lot of energy, what with being only about 6 months old!

DSC_0023The trip was only 6 days but I still feel that it was needed.  It was really nice to get away and relax, not think too hard about all of the things that stress me out from day to day.  It really felt like a vacation with a reason, and I’m really glad I got to take it.  I especially loved getting to spend time with my old friend and her family.  She’s a really strong woman and an inspiration to me in some ways.  I’ve really missed her, and it was nice to get to see her growing family, getting to know them a little better and spending time with them.
